noun
In South Asian cookery: a dish of potatoes and cauliflower cooked with onions, garlic, and spices.
Origin
1970s. From Hindi ālū gobhī (also gobhī ālū) from ālū + gobhī cauliflower, cabbage from Sanskrit gojihvikā kind of plant (apparently from go bull, cow + jihvikā, jihvaka tongue, although this may reflect a folk etymology).
